Quick and easy 'Foods 2' you

The Hot Springs County High High School Foods 2 class would like to present to you with the recipes for a special dinner that is sure to take your breath away.

The class spends 2-3 days after they put together the recipe to taste test it and make sure it is something that our local community members are going to love.

The recipes will never be too difficult so that way if you do not have dinner/supper plans already made, it will just take you a few minutes to whip it all up.

No matter what recipe they provide, they will always make sure you can buy all the ingredients at a local grocery store.

We hope you enjoy their fabulous recipes and stay tuned for this new, regular feature in the IR.

Take A Bite

Chicken Bacon Kabobs

Ingredients

14 (8-inch) wooden skewers

6 tablespoons molasses

3 tablespoons balsamic vinegar

1/4 teaspoon ground red pepper

14 thick applewood-smoked bacon slices

4-5 chicken breast

Freshly ground black pepper

Preparation

1. Soak wooden skewers in water 30 minutes. Preheat grill to 250° to 300° (low) heat.

2. Stir together molasses and next 2 ingredients. Cut chicken breast into bite size pieces. Cut bacon in half.  Then wrap a slice of bacon around each piece of chicken.

3. Grill skewers turning every 8 minutes. Baste with half of molasses mixture, grill an additional 5 minutes.

Turn skewers and baste with remaining molasses mixture grilling an additional 5 minutes more or until bacon is browned and crisp. Skewers will be done when chicken reaches 165° F.

Remove from grill. Sprinkle with freshly ground pepper to taste. Serve immediately.

Grilled Corn

Soak your corn in water until the grill is hot enough that way your husk will not burn to your corn.

Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels. Seasoning may include salt and pepper.
